No-Bake Strawberry Bars

Enjoy these No-Bake Strawberry Bars as a fruity, delicious dessert or a quick breakfast! A nutty base of cashews, pistachios, and dates combines with a creamy, strawberry-yogurt topping made with Juice Plus+ Vanilla Complete. Topped with extra pistachios and orange zest, they’re as nutritious as they are tasty. Perfect for a no-fuss, wholesome treat!

 

Ingredients

+ 100g cashew nuts

+ 70g pistachio nut kernels (plus 30g for decoration)

+ Zest of 1 orange

+ 3 tbsp coconut oil

+ 60g dates, pitted

+ 150g strawberries, sliced

+ 250g plain Greek yoghurt (or yogurt of choice)

+ 2 scoops/sachets Juice Plus+ Vanilla Complete

 

Directions 

  1. Add cashews and 70g pistachios to food processor and blend.
  2. Add orange zest, coconut oil, dates and blend again.
  3. Place nut mixture onto a sheet of baking paper (or silicon baking sheet) and mould into a regular shape to create the base of the bars.
  4. Add yoghurt, Vanilla Complete and strawberries to food processor and mix until even.
  5. Spread strawberry mixture evenly over the nut base of your bars.
  6. Top bars with the additional 30g pistachios and orange zest.
  7. Serve and enjoy!
