Ultimate Cacao Walnut Brownies

These rich, fudgy brownies are packed with wholesome plant-based ingredients, making them perfect for healthy snacks for work, lunchboxes, or an indulgent treat without the guilt. Using Cacao Rocks for deep chocolate flavour, these brownies are naturally sweetened, dairy-free, and full of healthy fats from walnuts.

Ingredients    

+ 1¼ cups (150g) Ceremonial Cacao Rocks, melted
+ 1 cup (150g) wholemeal spelt flour (or oat flour for gluten-free)
+ ½ cup (120g) mashed banana (or unsweetened applesauce)
+ ½ cup (125ml) almond milk (or oat milk)
+ ⅓ cup (80ml) maple syrup (or date syrup)
+ ¼ cup (60ml) coconut oil, melted
+ 1 tsp vanilla extract
+ 1 tsp baking powder
+ ½ tsp cinnamon
+ ¼ tsp sea salt
+ 1 cup (120g) chopped walnuts

  

Directions  

  1. Preheat oven to 180°C (350°F) and line a baking dish with parchment paper.
  2. Melt the Cacao Rocks over a double boiler or in short bursts in the microwave, stirring until smooth.
  3. In a large bowl, whisk together flour, baking powder, cinnamon, and salt.
  4. In another bowl, whisk the wet ingredients (mashed banana, almond milk, maple syrup, melted coconut oil, vanilla, and melted Cacao Rocks) until smooth.
  5. Gently mix wet and dry ingredients until just combined—do not overmix.
  6. Fold in chopped walnuts, saving a few for the top.
  7. Spread the batter evenly into the lined baking dish and sprinkle remaining walnuts on top.
  8. Bake for 20-25 minutes or until the centre is just set (don’t overbake for fudgy brownies!).
  9. Let cool completely in the pan before slicing into squares.
