Ingredients
+ 2 scoops/sachets Juice Plus+ Vanilla Complete+ 10-12 Medjool dates, pitted (add more if too dry)
+ 10-12 dried apricots
+ 100g cashews
+ 1 cm piece of ginger, grated
+ 40g shredded coconut
Directions
- Check that there are no stones in the dates.
- Process the cashews alone in a food processor or blender until fine.
- Add the dates, apricots, and grated ginger to the cashews.
- Blend gently to form a stiff dough.
- Roll the mixture into about 15 balls.
- Coat each ball in shredded coconut until fully covered, adding more coconut if needed.
- Enjoy immediately or store in the refrigerator for 3-4 days.
