Protein Snowballs

Get festive with these Protein Snowballs, a perfect Christmas-themed snack that’s as delicious as it is nutritious! These bliss balls are packed with natural sweetness from Medjool dates and dried apricots, a hint of ginger, and a protein boost from Juice Plus+ Vanilla Complete. Coated in shredded coconut, they resemble snowballs, making them a fun and healthy treat for kids and adults alike. Ideal as protein balls for a holiday gathering or a healthy snack to keep in the fridge for 3-4 days.

 

Ingredients

+  2 scoops/sachets Juice Plus+ Vanilla Complete 
+  10-12 Medjool dates, pitted (add more if too dry)
+  10-12 dried apricots
+  100g cashews
+  1 cm piece of ginger, grated
+  40g shredded coconut

     

    Directions

    1. Check that there are no stones in the dates.
    2. Process the cashews alone in a food processor or blender until fine.
    3. Add the dates, apricots, and grated ginger to the cashews.
    4. Blend gently to form a stiff dough.
    5. Roll the mixture into about 15 balls.
    6. Coat each ball in shredded coconut until fully covered, adding more coconut if needed.
    7. Enjoy immediately or store in the refrigerator for 3-4 days.
