Peanut Butter & Homemade Jam Muffins

Craving a healthy snack that hits the spot? These delicious, protein-packed muffins made with Juice Plus+ Vanilla Complete are perfect for lunchboxes or a midday pick-me-up. Blended with chickpeas, peanut butter, and a touch of maple syrup, these muffins are both nutritious and flavourful. Top them with a sweet strawberry-date spread for a fresh twist. Easy to make and even easier to enjoy!

 

Ingredients

+ 250g can chickpeas, drained and rinsed

+ 3 tbsp all natural peanut butter

+ ¼ tsp baking powder

+ ½ tsp salt

+ 1 scoop/sachet Juice Plus+ Vanilla Complete

+ 50ml soy milk (or milk of choice)

+ 10g maple syrup

+ coconut oil for greasing muffin tins

+ 250g strawberries, sliced

+ 7 dates, pitted

 

Directions

  1. Preheat oven to 195ﹾ
  2. Pour chickpeas into food processor along with peanut butter, baking powder, salt, Juice Plus+ Vanilla Complete, soy milk and maple syrup. Blend until mixture is smooth.
  3. Use coconut oil to grease the muffin tins.
  4. Distribute mixture evenly into the muffin tins and bake for 20 minutes and set aside to cool.
  5. In another food processor container, add strawberries and dates. Blend until mixture is smooth.
  6. Once muffins have cooled, top with strawberry mixture and enjoy!
