Strawberry Banana Baked Oatmeal

Looking for a healthy snack for kids that’s both sweet and nutritious? This Strawberry & Banana Baked Oatmeal is the perfect homemade treat! Packed with ripe strawberries, bananas, and the added nutrition of Juice Plus+ Vanilla Complete, it’s a delicious and wholesome snack that the whole family will love. Whether enjoyed hot or cold, this easy-to-make baked oatmeal slice is a great way to use up overripe fruit and make snack time both fun and healthy!

 

Ingredients

 + 1 cup strawberries

+ 1 banana

+ 2 eggs (omit if vegan as mashed banana is a good egg replacement)

+ 2 tbsp maple syrup

+ 1 tsp vanilla

+ 2 tbsp cinnamon

+ ¼ tbsp salt

+ ¼ cup ghee or coconut oil

+ ¾ cup almond milk

+ 2 cups rolled oats

+ 1 scoop/sachet Juice Plus+ Vanilla Complete

 

 

 

Directions     

  1. Preheat oven to 190C.
  2. Beat two eggs.
  3. Add maple syrup, vanilla, cinnamon, salt and ghee. Mix until smooth.
  4. Add milk of choice, Vanilla Complete and mashed banana (use a fork to mash). Mix until smooth.
  5. Stir in rolled oats and half of the strawberries.
  6. Bake for 20 minutes.
  7. Use remaining strawberries to decorate top. Enjoy hot or cold.
