Cacao Power Muffins

These rich, moist, and chocolatey muffins are made with wholesome, plant-based ingredients—perfect for a healthy snack for work, lunchboxes, or a nutritious treat for kids. Using Cacao Rocks for deep chocolate flavour, they’re naturally sweetened, dairy-free, and full of fibre.

Ingredients    

+ 70g Ceremonial Cacao Rocks, melted
+ 1½ cups (225g) wholemeal spelt flour (or oat flour for gluten-free)
+ 2 tsp baking powder
+ ½ tsp cinnamon
+ ½ cup (125ml) almond milk (or oat milk)
+ ¼ cup (60ml) maple syrup (or date syrup)
+ ¼ cup (60ml) coconut oil, melted
+ 1 tsp vanilla extract
+ 1 tbsp ground flaxseeds + 3 tbsp water (flax egg)

  

Directions  

  1. Preheat oven to 180°C (350°F) and line a muffin tray with paper cases.
  2. Make the flax egg by mixing ground flaxseeds with water in a small bowl. Let sit for 5 minutes.
  3. Melt the Cacao Rocks over a double boiler or in short bursts in the microwave, stirring until smooth.
  4. Mix the dry ingredients (flour, baking powder, cinnamon) in a large bowl.
  5. Whisk the wet ingredients (almond milk, maple syrup, coconut oil, vanilla, flax egg, and melted Cacao Rocks) in another bowl.
  6. Gently combine the wet and dry ingredients until just mixed—don’t overmix!
  7. Spoon into muffin cups, filling about ¾ full.
  8. Bake for 18-20 minutes, or until a skewer inserted comes out clean.
  9. Let cool in the tray for 5 minutes, then transfer to a wire rack.
