Ingredients
+ 70g Ceremonial Cacao Rocks, melted
+ 1½ cups (225g) wholemeal spelt flour (or oat flour for gluten-free)
+ 2 tsp baking powder
+ ½ tsp cinnamon
+ ½ cup (125ml) almond milk (or oat milk)
+ ¼ cup (60ml) maple syrup (or date syrup)
+ ¼ cup (60ml) coconut oil, melted
+ 1 tsp vanilla extract
+ 1 tbsp ground flaxseeds + 3 tbsp water (flax egg)
Directions
- Preheat oven to 180°C (350°F) and line a muffin tray with paper cases.
- Make the flax egg by mixing ground flaxseeds with water in a small bowl. Let sit for 5 minutes.
- Melt the Cacao Rocks over a double boiler or in short bursts in the microwave, stirring until smooth.
- Mix the dry ingredients (flour, baking powder, cinnamon) in a large bowl.
- Whisk the wet ingredients (almond milk, maple syrup, coconut oil, vanilla, flax egg, and melted Cacao Rocks) in another bowl.
- Gently combine the wet and dry ingredients until just mixed—don’t overmix!
- Spoon into muffin cups, filling about ¾ full.
- Bake for 18-20 minutes, or until a skewer inserted comes out clean.
- Let cool in the tray for 5 minutes, then transfer to a wire rack.
